Mexican Dinner Recipes!
Tonight, I made a Mexican meal, where I try and make beans and rice like our favorite restaurant....
It turned out pretty good! I made Mexican Rice with black beans, guacamole with blue corn chips. Delicious!
Black Beans:
3 cups veggie broth
1 1/2 Cups black beans
2 cloves chopped garlic
2 tspn chilli powder
1/4 tspn salt
1 tspn chopped hot pepper
a sqeeze of fresh lime juice
Put all ingredients in a saucepan, bring to boil, set to medium low and let simmer for 1.5 to 2 hours, stirring every 10 minutes or so. Toss in chopped cilantro before serving.
Rice:
Put in a saucepan:
8oz or so can of diced tomatoes,
1/2 Cup or so water
1 medium chopped carrot
1 Tbs finely chopped hot pepper
1 finely chopped clove garlic
1 tspn chilli powder
1 tbs finely chopped red onion
a squeeze of fresh lime juice
pinch salt
Set it on high, and bring it to boil then add 1 cup white rice. Bring to a boil again, then cover it and simmer, 15 - 20 minutes. Toss 2 tbs chopped cilantro and stir before serving.
Guacamole:
2 ripe avacados
1/4 cup lowfat sour cream
1 tbs finely chopped red onion
2 tbs chopped cilantro
1 tbs chopped hot pepper
1 tbs fresh lime juice
a pinch salt
In a bowl, mash avacados, add sourcream and stir. Add the remaining ingredients.
