For ripping my CDs, I use CDex (although that makes me a criminal here in oz, ripping your own bought-and-paid-for CDs onto an iPod is illegal)
Of course, you could use iTunes it's free, easier to use than CDex (but not as flexible) and you don't need an iPod to use it.
If you're looking for something to edit files, and convert between formats, have a look at audacity

I use sox (SOund eXchange) for all my audio conversion needs, and I have a few needs: I run a telephone switch among other things, so I end up converting a lot of audio files (one thing we do ends up normalizing, converting, concatenating, and converting back over 300 sound files).
Make sure MP3 support is compiled in. There is even a Windows version if your computer is thusly hobbled.
And a second vote for Audacity as well: it's quick and easy enough, and powerful enough, to handle what I've needed. It also has a Windows version, and both Audacity and sox are free software.

Do you mean CD audio to MP3 or perhaps a line in source.
Window, Mac, Linux or BSD?
I use LAME but that is me.

Seconded, well for a while at least, it pissed me off after a while, when it tried setting itself as default for protocols that it didn't support. So now I just rip to MP3 to begin with.
EDIT:, By the way, what is this "audio" format you speak of, none of my players so far support the .audio extension

I suggest dbPowerAmp (Or something like that). Free, works well enough, and is simple enough that my brother can use it.
