So I have usually prefered for time's sake to always use canned beans in my recipes. I'm talking chickpeas, kidney beans, and black beans here; my green beans are always fresh. After reading this (Slate) article I decided to try to switch away from the cans (which I have always recycled). I made hummus tonight and it was pretty easy using dried beans. I only had to cook them for 30 minutes when using an overnight soak. I would cook canned garbonzo beans 10-15 minutes to make hummus before. This is not that much more, though starting from dry beans one might need 3 or more hours to cook them without an overnight soak. Though, Garbonzo beans are about as bad as they get when it comes to long soak/cooking times.

Hmmmm, okay, you may have sold me. I'd never really thought about the difference in environmental impact when it comes to canned beans vs. dried. I guess the zombie-like stupor which descends upon me every time I enter a supermarket is to blame [Razz] .

I am a bit rubbish at remembering to put beans out to soak the night before, though. And I'm a bit rubbish at having an appetite for the thing I decided to cook last night. Once today rolls around, I'm usually in the mood for something else.

But considering what a staple beans of all kinds are in my diet, it's probably worth a good go, at least.

Ever try a pressure cooker? I used to cook my own soybeans in one of those, and they save a ton of time/energy.

I don't own one, but I could try our autoclave in the lab...

____ While in the USN as a Hospital Corpsman I/we would often use an autoclave for cooking, contra brand foods during hours the ships galley was not available. Corn on the Cob always went over well, as did many forms of sausage.

____ Cleaning the autoclave is difficult if you have a boil over in the chamber. This is usually caused by opening too soon, while still under pressure.

that seems like the perfect way to cook large amounts of corn on the cob. If I had a restaurant, and we served corn on the cob, ( we would I'm a Hoosier), I would buy an old autoclave to cook 'em.
